Moroccan Grilled Fish Kebab
Ingredients
Skewers
2 minced garlic cloves
Chili powder
Black pepper
Salt to taste
Paprika
Lime juice
Finely chopped cilantro
Olive oil
Chopped red onion
White fish fillet like bekti or pomfret or salmon or sardine
Procedure
The fish fillet has to be cut into one inch cubes. These cubes have to be kept inside a plastic bag that is resealable. Combine all the remaining spices to prepare the marination.
Pour the marination inside the bag so that each cube is thoroughly coated, seal up the bag and let it marinate for around four hours.
After four hours take out the marinated fish and get the grill preheated. Coat the excess marinade on the pricked fish cubes, and string the cubes on to the skewers. Wooden skewers should be soaked in water for an hour before this.
Now the fish kebabs have to be placed on the grill. For around 10 minutes grill the fish on medium heat and turn constantly or else the sides will get burnt. Once done, take out the kebabs and serve with smoking hot rice and salad.
Italian Grilled Tuna
Ingredients
Pepper
Salt
Fresh oregano or minced dried oregano
Capers
Lime juice
Thinly sliced scallions
Roasted marinated peppers
Minced parsley
Olive oil
Tuna steaks
Procedure
In a saucepan mix together all the ingredients except tuna steaks. Next let it simmer over fire, continue to stir and let the whole mixture become homogenous. Then set the mixture aside and let it cool. Thus the roasted pepper sauce is done.
Next, soak the tuna steaks in lime/lemon juice and the remaining olive oil for 30 minutes. In the interim, you have to get the grill heated to the maximum possible temperature.
Oil the grill and grill the tuna for around 5 minutes on each side until done. But take care not to overcook tuna. Stop grilling when the flesh becomes opaque. Pour the sauce on top and serve smoking hot.
